Smells Soo Good....

Tonights meal is Spaghetti.....
First I saute in a dutch oven: 6 Farmer John pork linksand 1/3 lb Ground Sirloin with one small white onion and one shallot with 3 Tbsp Olive Oil and 4 1in. cubes of Fat Back for body...
Next I add 10 Cloves garlic. 4 of the cloves choped and the rest are halved (smaller ones are kept whole) and continue to saute till fragrance comes out. Add Salt and Pepper and one red chillie.
After Saute is finished, the fat has rendered I remove the fat back cubes (whats left of them) and I add 1 large can of imported Italian plumb tomatoes, cover and simmer on lowest setting.
Next I fire roast 2 Red Bell Peppers and one Green, peel the skins and dice, Add 2 cloves diced garlic and 1 small shallot. Mix in a bowl with FRESH basil, orgegano, thyme, salt and pepper. (set aside)
Meatballs are made with the remaining ground Sirloin and pork, mixed with Garlic, bread crumbs, italian seasonings and a parmesian cheese. They are rolled and baked at 400 degrees for twenty minutes and then put under the broiler till dark brown.
Next add the Meatballs and roasted pepper mix to the dutch oven and simmer for twenty minutes and Wholla... Sauce is done....
