Help me design my bulk substrate

Hey everyone Id appreciate some help with designing my new bulk substrate. My first time doing bulk I did monotubs and spawned rye to straw/cow poo/verm. I got a bale of straw and bagged cow manure from a farm supply store and fruited uncased with great results.

Now I'm trying to make my own grow bags to fruit in invitro, because they offer a few benefits vs monotubs (easier to conceal, move, dunk, etc...). My plan is to keep it as simple as possible. I live in an apartment so using cow or horse poo may not be possible.
My plan is to prepare enough rye spawn and then mix and hydrate all my substrates, load them into baking trays and pasteurize them in my oven. When cool I'll mix the substrate with spawn in big ziploc bags that I either cut holes for tyvek or polyfill or close the ziploc lid on some polyfill. Once colonized Ill cut air slits or add more filters for increased air exchange.

My 1st ingredient will be verm, simple enough.
For my 2nd ingredient I will use coir, haven't used it before but seems simple enough.
For my 3rd ingredient I probably won't be able to get field cow or horse manure or a bale of straw so I'm considering a few options. I could get bagged cow manure but I could also get bagged organic compost with manure or worm castings. I'm also considering adding a kitty litter I saw called "Swheatscoops" that claims to be organic all natural made of 100% wheat as my straw component.
Is it worth adding gypsum to a bulk substrate? Where can I get it? What about coffee? It has to be used? Any kind? What about PH buffers?

The easiest combo to me seems to be verm/coir/organic compost or worm castings. If I could use that wheat kitty litter as straw that would be clutch. If I can add gypsum or coffee for benefit without risk Ill throw that in too.

Am I forgetting anything?

keep it simple and just do coir and verm :laugh:

add some weak coffee to it if you feel the urge.

i never really notice a difference in yield when i get crazy and add a bunch of things to the mix, as long as you start with a nutritive spawn you should be good.

Adding coffee grounds is for the lack of nitrogen in coir, because cow poop is rich in it, but nothing can replace poop.  Ive had excellent results with coir/coffee/verm/gypsum and I'm pretty sure you could just use coffee as the bulk sub alone if its weak enough so it probably isn't going to mess the bulk sub up if you add to much. Gypsum is a must add to everything, in my book at least. it can be found at garden places around my area and for some reason Ive seen it at brewery stores also.

All I ever use is Coir/Verm with alittle bit of coffee.. But I don't always use coffee, and I get great results.

Agreed with all above. Coir, coffee, gypsum, and verm (if you are so inclined.) 

I do have a friend of mine that grew some very potent cubes on just used coffee grounds, but I've yet to get the actual method out of him. Seeing as he's somewhat crazy (yells at himself, sings in French, other various weird shit) I doubt I'll actually get the method out of him.

Thanks for the replys everyone I'm going to go with verm and coir, then worm castings if I can find it here (Where do you look? Stupid question I know). I'll also add gypsum if I can find it here(Again where do you get it Ive never even seen it) Does adding gypsum clearly benefit a bulk substrate? There's also a bagged organic compost that includes manure that I used outside that I'll probably add some of. I'm also trying to order some donkey poo and straw
