question about drying mushrooms
    #11364389 - 11/01/09 06:14 PM (14 years, 4 months ago)

I understand why it is important to keep drying mushrooms away from heat... but I have read that it is also important to keep drying mushrooms away from light. Why is this? What harm can light do just so long as it is not producing excessive heat?

The actives degrade over time by absorbing light.

"Over time" Put them in a cool dark place after they are cracker dry. Store them with extra desiccant in the container, just in case.
