So stinky everytime!

This is my first post, I hope I'm in the right place.
So I'm using the pf tek method and everything was going great on my first batch that I was PCing (no smell out of pc)
On my second jars (16 1/2 pint) that I PCed as soon I let out the steam and opened the top I smelled stinky butter cheese nastyness. Also the substrain had a different color much much browner this time. Didn't know any better so I injected spores in them. I got to reading the forums on bad smells and everyone was saying to throw the jars out before it gets to any jars that don't havea contam. So I did...
Just got done trying to pc 16 more jars, opened it and that same damn smell and discoloration is there. What makes this happen? What can I change? Help help help!!!!

90 min at 15psi. I did this with the first batch too and they were fine.

90 min might be excessive...
you won't have a contam right after PC'ing, did it smell anything like cooking rice?
when a smell from the jar is mentioned it is usually after some time colonizing(after inoculation), not as it is done getting PC'ed.

If you allow the PC to run out of water burning can happen and cause a nasty smell that is near impossible to get out of the PC. Has there always been water left on the bottom?

It didn't smell like cooking rice. It was kind of a butter cheese smell but very funky you wouldn't want this on your popcorn

Most likely. Were these tries successive or did the PC have time to cool down completely before you fire it up again?

I think your fine, you just got noob nerves, inoculate 1 of the questionable jars and if it works they should all be fine.

Ive never cleaned my PC, been using it for 9 months now. smells like rye berries....smells like cloves and cinnamon.

Some people clean some people don't, this could cause a smell but either has no effect on your product. Some (like me) are just more anal than others.
