Sour smell coming from fruiting chamber?

So I have 5 cakes in one fruiting chamber and they are all working on their second flush, and everything is coming along nicely.
I have another cake in a separate fruiting chamber that has nice little mushies growing on it, and they continue to get bigger, but two days ago I noticed a sour smell coming from the chamber. I changed the perlite out, sprayed it down with 3% peroxide, and changed the paper towel it was sitting on. (The old one felt really slimey)
What could this be? The mushrooms continue to grow like nothing is wrong, but the sour ass smell makes me feel like something isn't right.
Any suggestions? On the stem of the shrooms there is some white fuzzy stuff, so maybe it's cobweb? I had lots of mycelium growing on the end of the shrooms first flush, but I don't think this is as thick.
Should I throw it out? It is in its own fruiting chamber, so it won't contaminate any cakes.

it might be the paper towel put your cakes on jar lids or foil

i would say if you can consistently smell the foulness, toss it i would also suggest putting your cakes on some metal foil (aluminum foil, for example) in order to prevent the cake growing into the towel or the towel from becomming contam'd (and then contamming the cake)
when you sprayed with peroxide, was there a noticable hissing noise? if there was i would say toss it...if not it may be something like trich on the inside of one of your cakes...idk hard to say without pics

i doubt it.. but maybe..
could be bacteria in standing water.. what kinda FC u have, what are you using for humidity .

use your nose man, smell all the cakes, which ever one smells the strongest is your problem. considering you cleaned it all out its obviously one of the cakes. any bad smell is a sign of trouble.

Bacteria isn't really a problem during fruiting, unless it's bacterial blotch on the fruits themselves.
The problem was probably the paper towels.

Hell yes fools, I did not expect this much of a response. The cake is isolated, and I left it uncovered while I went out. I just got back and the smell is gone, but I'm going to cover it up and see what happens in a few hours. All of the shrooms have grown since I left a few hours ago.
I'm trying to get pics up, but I gotta find a camera first.
Hopefully the hydrogen peroxide does the job. Just spray the cake straight up? That's what I did, so if I'm wrong, then fuck me.

Damn, it's been maybe 5 minutes since I re-covered the chamber and the smell is already back. I don't know what the fuck could be wrong. The shrooms look normal, I replaced the perlite and cleaned the chamber and I can't really see any sign of mold or bacteria, except for maybe on the stems near the cake, which could be mycelium, but I think ya'll would need a pic to see....

not a prob but quite possible sour smell usually points to bacteria.. could have been in the center of a cake before full colinization sometimes it will secrete an amber liquid.. but yeah paper towels sound like a bad idea.

I'm not too sure where I got the idea to use a wet paper towel...
Of the 2 fruiting chambers, the one with the single cake I had to toss because the shrooms burst with water when they were picked, and the smell was horrible.
I changed up the paper towels with aluminum foil in the second fruiting chamber, sprayed with peroxide, and the smell went away. I ate a couple shrooms because everything looked normal, and I didn't puke or anything, so I guess I killed the bacteria, and had a successful trip.
Although, I had the same sour smell coming from my incubation chamber after putting together 10 more cakes, so I went ahead and tossed them all.
Does anyone know what exactly this sour smell is? Is there a certain bacteria that causes this smell?
