I think people experiencing "true love" would sacrifice anything for each other, not sacrifice their love for their work.

You shouldn't have to.

A person's "work ethic" and/or career goals are similar to other deeply seated personal values.  It's just part of who you are.

No different than asking:  "Would you sacrifice your religious or life view for love?". 

Its just another factor to consider when choosing a partner.
