i feel that wbs is completely inferior to rye.  But I am currently working with wbs atm because rye cost too much in my area, like 6$ + change per 4 1qt jars.

i buy rye at a whole foods loose at 1.29 the pound they would also order the 25lb bag for less than that. i just threw away 5 jars that had extra moisture and looked all sticky inside rye holds moisture perfectly

Oh, and while I agree that WBS is inferior
to rye, I gotta say I work with it much
more often.
You don't have to soak WBS for 24 hours,
and you don't have to deal with the
smell of (starting to) fermenting rye.
That smell makes me sick...

rye has never fermented on me, i used up  whole 25lb bag, bought a 20lb bag of WBS and i had about more than half that looked slimy and smelled like shit when disposed. just saying WBS is not necessarily cheaper in florida WBS cost like 8+ bucks a 10 lb bag.

WBS varies quite a bit by brand. Doc, I remember you recommending Pennington's and I got it for that reason. I notice it's very heavy on the milo, so the Take Another Look at Milo thread was interesting. Maybe you can chime in on the different WBS available.  I've seen some generic WBS that seems to use millet the way Pennington's uses milo.  It looks good in that it is mostly whole seeds, very little cracked corn- but I haven't tried it.

I want to give rye a shot, but haven't been able to source it locally. Online is too steep, but Pennington's is less than .30/lb.

Any grain will work fine,  if you are having problems it is most likely genetics not your grain.
I use rye just because it is easier and less mess,  witch makes the wife happy.  But WBS works fine it's just messy.  Try isolating or at least cloning for better results.

Agree.  WBS is alot dirtier than Rye.  Rye is just so much cleaner and doesn't tend to fall through the strainer and clog up the drains.

Just it is dirtier, so you need to give it a really good rinse.  And most time I only need to rinse rye once.  But the only real problem for me is that it falls through my strainer/colander and clogs up the drain if I ain't careful.  I still use it though when I am out of rye.

Is this a serious question?
It just is!  You have to rinse it about ten times just to get the dirt off it and then you have the damn floaters that end up in the drain.
Try rye once and you will know.

How long do you guys actually soak rye?
I don't even soak WBS, just rinse the fuck
out of it, dump it in boiling water and let it sit.
It is messier than rye IMO...

O.K. I see. I found this big half-sphere strainer in a bargain store.  It's made with screen that has about a 1.5mm mesh. It's flimsey, so I put it in a colander. I rinse the hell out of the WBS with hot water and pour the water through it and catch the floaters. No mess to speak of, but maybe a strainer like that's hard to find.
