12-24 hours more than that and they will sprout and/or ferment.

I'm in florida and have found 50 lb bags of WBS for $10. Where are you looking? You can find WBS at any walmartish store, any grocery store, or any home depot or lowes type store. You can also find it at pet stores although it's usually more expensive. The cheapest I've found it so far I think was at TSC.
I haven't found any rye at any of those places. The reason I use WBS is because I can get it anywhere I go. If I'm grocery shopping and need WBS, I can pick some up. If I'm at walmart buying whatever randomass cheap item I need from that shithole then I can pick some up there. If I happen to be at a hardware store for whatever reason I can pick some up there. TSC also sells syringes, so I can pick some up there when I get needles or syringes or w/e.
I did find RGS, but it was $30 for a 50 lb bag.

Last time I worked with it, I soaked it overnight, and it already started to ferment by the morning. That shit was stinky

Start your soak with boiling or near boiling water, this will slow the fermenting/sprouting. CH

Thanks, CH. I'll give it a try since I've got another 15 lbs of organic rye layin' around.
