what exactly does it mean by the color that the mushroom bruises? is that the color it turns after picked?

When you bruise a mushroom, the chemicals in it are exposed to air, and they oxidize...Some stain red, yellow BLACK, brown...The ones that contain psilocin/psilocybin oxidize blue, but it is my understanding that other mushrooms have blue flesh that can be confused with "bruising" and others still, stain blue but not active, so don't let this be a definitive ID tek....

If you handle a mushroom roughly or slightly pinch the stem, that's briusing it. Some mushrooms will turn different colors where they have been briused(due to chemical oxidation reactions as someone said). Most psilocybian mushrooms will briuse a blue-green, or just blue color. Not all mushrooms that briuse blue are active, some are toxic. The bruising reaction will help aid in idenfication, but the reaction alone cannot tell you if the mushroom is safe or not.

Will a mushroom containing psilocybin bruise always, if handled roughly?

Nope, not always... Pan subbs and Liberty caps don't always briuse.

Yeah, only about 30-40% of the subbalteatus I found yesterday blued, and only slightly. Since the mushrooms are a rusty red brown, its kinda hard to tell that they are even bruising a BLUE. Its easiest to see near the white mycelium.
