Lophophora can and does adjust to full sun conditions like MANY other plants.
Reddening is a natural defense mechanism that occurs so that excess light can be reflected.. A few examples:
Venus Flytraps (Dionaea genus, seen the red cultivars? Only grow red in high light conditions) Trichocereus (Pachanoi, Bridgesii, Peruvianus, the blue coloring? Sunscreen.) Haworthia Coarctata Lophophora genus.
Most literature DOES state that they are found growing in shade and the likely reason behind this is that full sun will not kill a medium or larger specimen with an established root system, but WILL kill a younger less established plants (I.E. Seedlings.).

This quote says it how it is.. They are often found growing in an area which is partially shaded for a part of the day.. However, it uses the word 'often' and not 'always' because it is not an absolute. In cultivation shade is generally preferable because the plants are not nearly as hardened as their wild counterparts. Given a large enough root system they can and will thrive in full lighting conditions.
Another couple of factors worth mentioning include the cephalium and climate. The cephalium and wool acts *just* like cactus spines in that they will elongate, thicken, and grow both with age and depending on lighting conditions to offer protection to the plant from sun in the form of a physical barrier. Also as I said climate.. The lighting conditions in most specific areas are not equivalent to what you would find in a scorching desert, the intensity is variable so I would imagine that in many areas they can take full sun without ever even reddening.
There are of course other factors to consider as well.. Watering schedule, general cloud conditions (Climate again), the root system as mentioned, temperature of course..
In short, while the literature may say that full sun is not optimal, it works fine. I find more often then not that professionals will advise readers to a 'safer' of two options due to restraints on size an article or not wanting to overload them or etc.. So in short, this information simply may be omitted under the pretense that its 'better safe then sorry' to suggest shade to the reader.
Partial shade from scorching desert sun IS what Lophophora *wants*. It however provides for itself in absence of a natural source via reddening (NOT sunburn, big difference) and producing larger and longer wool to shade itself. A Lophophora grown outside of at least several hours of full sun would likely never produce pronounced wool. The reddening is a normal defense mechanism that this plant has evolved because it CAN grow in full sun without detrimental effects... Perhaps a thousand years ago if a Lophophora's shade tree died or fell, the specimen would also die, but now days this is not the case.
I grow mine in full sun, have for two years now to no ill effect. It is not at all bad advice if you have some prior knowledge of cacti and know how to acclimate something slowly.

No, the redness in Lophs is usually due to someone not realizing they are a shade plant. It's called sunburn.
Just so that some newb doesent read this I want to clear it up.. Reddening is not sunburn when it comes to plants. Actual sunburn (which causes the tissue to die) is at first yellow ('warning' stage) then turns to either white or brown. If it reaches the stage where it turns yellow one can move the plant into shade quickly and often times the plant will not have permanently scarred tissue. Once the tissue reaches brown or white, it IS dead and will be scarred permanently and/or until the plant outgrows it. Reddening is the plants defense against this, not exactly an inclination that actual tissue damage is inevitable.
Also, Nothing in nature is ever an absolute, so I think it's quite misguided to call their suggestion of full sun out as bad advice in this situation. Even if you think shade is optimal (in the end it is, the plants natural defenses tell us it wants some protection) then it is still misguided to call it bad advice because some people like the aesthetics of a wooly and hardened Lophophora specimen.
