Are you going to start with an actual, fresh pumpkin or stuff from a can? If the former, I'd like to have the recipe you're using. I have a pumpkin lying in wait until I find something worthwhile to do with it. I'm a bit fed up with pumpkin soup by now, and the oven-grilled pumpkin pieces have dropped a few notches on my desirabilities list as well.

Great, thanks. Good to hear they came out pretty good. What would you improve on this recipe if you'd make them again?
Btw, I'm also considering muffins (e.g. here http://www.cooks.com/rec/view/0,194,152173-248204,00.html). In fact, I think I'm going to try make those first.
What consistency/thickness does the pumpkin mash sold in cans have? I've only used fresh pumpkins and I want to get the moisture content in my home-made mash right so it works well in the recipes out there on the net.

Its not too thick they must add water. Try getting a small can of it and just use that to get your fressh mash where you want it.

I think I'm just going to guesstimate the water content. I haven't come across any pumpkin mash around here; pumpkins have only been somewhat in vogue since a year or two around here. Before that, they used to be consumed only by dietary fanatics. Today, they are enjoyed by a somewhat broader population, although in 95% of the cases in the form of pumpkin soup. One of the major supermarket chains have been carrying fresh pumpkins since one or two years now, but I have never seen anyone purchase one except for my sister.

Pumpking from Southern Tier, super kind.
I continue to be shocked by how many people in the world love pumpkin, its use in brewing/cooking, and the spices attributed... Yet very few people I know in real life do.
Especially here in New England this time of year... it's perfect!
