Im also new and just bought a 12 quart. I would say even though you dont think you will grow more, go with the 16. It will do you much better, and be more roomy for you

I have a 6qt and I'm upgrading to a 26 or 27 qt for my next bulk.
In this hobby eventually you will realize the best methods will generally come from quart jars of grain.
a small pressure cooker can only hold 2 quarts if jammed in correctly, which is really hard to do when it's still hot as hell from the last 6 or 7 hours of pressure cooking you've been doing to sterilize all those damn jars.
A good pressure cooker in this hobby is probably the most badass thing you can get next to a flow hood IMO...

The All Americans are the best if you can afford one or find a deal. Keep an eye on craigslist. Slimz is right about vintage. I have a 70 year old Ball that works just like an All American. Look for National as well with the metal to metal seal and clamp-down lid.

my 16 qt works great - easily holds 7 quart jars
