This is really cool  Ever thought about adding some of the spices in pumpkin pie? In the fall around here pumpkin spice coffee makes its way around, its one of my favorites. I don't know much about wine making (as of yet ), so I don't know what the deal is with adding herbs and such... but it could be cool.
What does racking mean? I know I could google it... but I also know I'd end up on a multi-hour learning process on how to make wine... and I should already be working on this problem set of mine... .

"Racking" is the term we use to describe the transfer of wine from one carboy to another.
You do the transfer carefully, to avoid the wine coming into contact with oxygen - which will ruin the wine! Usually it's done with a siphon (anything from a simple piece of hose, to an automatic electric pump...I use a hose). You try to get the wine to run down the side of your new carboy, so it doesn't splash at the bottom.
I try to rack my wines every 2-3 months. You do this because the dead yeast at the bottom can start to rot after about 3 months. You rack the wine as long as it takes to "fall clear", or when it goes through 2 rackings without any yeast falling to the bottom.
Alternatively, you can filter your wine once and be done with racking it! Of course this costs a lot more, you have to buy the actual filter equipment and then you need to buy filters (they are only good once).

Yeah, the waiting game Well im back to brewing again, just baught new kit. Have only 1 problem, i dont have big enough pot (only 5 liters when the liquide malt extract is 2 liters), the liquide in the pot should end up with 6 which means that the pot must be atleast 8 (boil overs etc.). Suggestions?

Will end up with to big gravity which will cause to alcoholic beverage... But it is a nice addition to the flavor if the honey is damn good.

And I don't filter my wine! If you do the racking process enough (enough times) then you shouldn't have to filter it!

Just opened a bottle! It's a little under a year, but I thought what the hell - I've got to try it before thanksgiving weekend (2 weeks away) 
All I can say is wow!!!! 
It tastes like a store bought white wine! Except the finish is longer and more intricate than a lot of whites I've tasted. It's kind of weird how much it tastes like a grape based wine. I didn't use any grapes!! I tried it out on my fiance, and she immediately asked for a glass of her own.
I highly recommend this recipe to anyone who likes a nice dinner table wine! It clears the palette nicely!

I get 6 bottles from a gallon, if I'm careful. Total cost (after equipment purchase) is about $2/750mL bottle.
I highly recommend this as a hobby!! 
I just made a batch from wild grapes I found growing near my place. Should be good! It will probably take 3-4 years, though.

Muscadines make quite a good wine, so I hear! As with all wild grape wines, it'll take a little longer to finish (3-4 years) but the wait is well worth it!!
One of the bigger problems is the acidity of the grapes...but acidity tends to age out pretty well - why it takes 3-4 years. Still, you'll probably have to add something like calcium carbonate to reduce the acid.
I thought the grapes I used were muscadine...but now (after the first racking - acid test) I think they were frost grapes instead. I will have to actually add acid now! It's only around 0.4%-0.5% TA.
