It has a strange sweet smell that I can't quite put my finger on...the pumpkin smell is completely gone from it though (or, at least, overpowered). It also smells strongly of alcohol.

I got the pumpkins (get "pie pumpkins") from a grocery store, and all the chemicals from a wine shop.

Making wine is incredibly easy...especially if you have ever grown mushrooms! Cleanliness is godliness, in winemaking! Really the only thing you have to worry about is getting the stuff contaminated, although the major one to look out for is acetobacter. Still, a simple wash of the hands and bleech on anything your wine contacts should be enough! You've also got the added antimicrobial benefit of the alcohol itself!
Once things get going (fermenting) you rarely run into problems. At least I haven't!

All wines get better with age...that being said, I've tried most of my wines after just 3 months (even after just one month, for Apfelwien) and they have all tasted pretty good!
One of the things I enjoy about winemaking is stashing a few bottles away in my cellar (well, closet, for me). Then you can take them out later to drink. You will be surprised what a few extra months can do for an already good wine!!!

Looks good, the color reminds me orange juice =] Nice carboys collection there trendal you sure this place would be enough if foam raises? airlock showing activity already? O.o

Vigorous fermentation has already ended, so I doubt there will be much foam. The airlock was only going about once every minute or so.

airlock costs here about 3-5$ carboy is pretty expensive...

Those 1 gallon carboys I got for free, from my grandpa. I got some other 5 and 6.5 gallon ones from a second-hand store for about $5 each...so you can definitely find them on the cheap!
A quick search around the net shows 1 gallon glass carboys are around $5 each. The 5 gallon ones are anywhere from $25-$35 each.

kewl looking recipe.. i just racked 5 gallons of fig wine the other day.. it been in the carboy since august.. i'm gonna break some out for thanksgiving.. its differnent the first taste is very dry.. then u start to taste it more.. i might add a little sugar

Yes! I'll rack it a few times more before I finally bottle it. First racking comes whenever it clears out (or at the 3 month mark, whichever comes first). Then I'll rack at about 1.5 month intervals until I get through about 2 rackings with no yeast left on the bottom. All in all, probably about 6 months before I get it into the bottle. Then wait at least a month for the bottle shock to wear off.
I probably wont drink any until next Thanksgiving. That was always the plan, anyhow
