Shiitake browning (Harvest!)

So I have these 5 shiitake sawdust blocks I made:



I made them up with different supplementation levels (wheat bran/grain spawn) and different types of sawdust (Oak and Alder).
They seem to be doing shiitake-ish things, "popcorning" I think, but I dont really know what I should do next...

Im debating the whole brown-in-bag vs. brown-out-of-bag thing.
They seem very nice and white, though in one or two I can still see sawdust, but it is colonized.  One or two look like they have started browning a little.



Any suggestions based on how far along these are would be greatly appreciated.  Thanks!

From what I read.. you brown out of the bag. I have a small block I made.. took 7-8 weeks to colonize... then I let it sit out for a few more weeks, open air-ish (GH closed with no enclosed bottom)... got a few brown crust areas, but not covered in it. Being impatient, it is in day 5 of cold shock now.. then I will dunk and fruit... But this is my first Shiitake experience.

Right on, thanks man.  I think I will take one or two out of the bag now and let the others go for a while.  That's one of the reasons I did five bags, so I could try different techniques and see what works best for me.

Keep me posted on how your block is doing, Ill do the same.  We'll be having Shiitake for dinner yet! :grin:

Nice, what a great little thread, good info there.  Im glad I didnt take any out of the bag yet, now Im going to wait till they are all blistered and brownish.  Shiitake are a trip...

yeah.. much is necessary.. I spawned some shiitake plugs to a bulk in a tray.. so I have never had them in a bag. Glad I got you to read that first! :wink:

Okay, so its been a little over a month and everything is brown and nasty!  Like it should be :grin:

I just took them out of the bags and set them out to dry for a week.

They are wet from all the brown water (metabolites methinks), one had about a half a pint in the bottom of the bag. :crazy2:

Anyone think I should rinse them off now or should I wait till the dunk? :shrug:

i would definitally let some of those get some rest first, or you will end up with moldy waterlogged bricks that fall apart

p.s. are you trying to take spore prints i don't think thats how you do it:smirk:

Lol right on.  Ya I just kind of dabbed them off with a paper towel.  They seemed to dry off quick and they look and smell healthy.

They are sitting on foil covered with press'n'seal,
so they dont eat the foil.:thumbup:

let them have air flow all around that will also help to keep the log healthy

Are you talking about the bottom of the block?  Like set them on a wire rack or something?

Yes, but not a wire rack, plastic.
Or that white plastic covered wire shelf stuff they sell at the hardware store.

The bakers cooling racks made of metal will corrode.

Definitely use a wire rack.  With them sitting on foil or plastic, they'll mold.  I'd also give them a good rinse.

Thanks for all the help here guys, it has finally paid off!

Been picking shiitakes now for 3 days or so. 
They don't look like the ones in the store, different strain maybe?

The caps are getting huge and the stems are really hard.

I'm 75% sure I'm doing everything (relatively) correct, but any observations or opinions would be most welcome. 
There are lots of mutants so far, but as they go along, they seem to be getting more normal, so we'll see!
