Do i need to incubate my cased trays?

after 2 failed attempts i finally got my jars to start colonizing. im pretty excited, this is the first time ive ever even seen mycelium besides from pictures here. anyway i have a question about casing. im using a shotgun chamber where i will be putting in trays layered casing/substrate/casing. im doing peat moss/verm casing btw. my question is: ive noticed that right after people case their substrate, they cover it with tin foil and incubate it for a few days before they put it into the fruiting chamber? why do this? i feel like things are just going to start molding under the foil. can i place my trays right into the shotgun chamber after casing them into trays?

room temp is fine. utfsf. keep them covered unless u like contams.
