I've done tons of searches, and read thread after thread that says bruising is not the end of the world. The two cakes in the pictures that are bruised the most were the first in the FC. They both got bruised pretty bad when I misted them with a larger spray bottle that is a little rough on cakes, I've noticed. Since then, and before putting the other cakes in, I switched to a smaller handheld bottle that sprays an extremely gentle, fine mist. I don't think the bruising is caused by drying out, because this happened less than a day after they were dunked for 24 hours. So I'm pretty sure I know why they got bruised--that base is covered.

What's puzzling me is that the two bruised cakes were fully-colonized a week ahead of any of the others--and they sat in the jars for an extra week to consolidate. I would think that would mean they would be the first to pin, but others started pinning inside the jars a day or two after full colonization, without consolidating at all. The "late-bloomers" are thriving while these two older ones seem to be struggling--and not pinning very much at all.

Does bruising/stress slow down pinning? Could it be that these cakes are behind in pinning because they had to recover from getting bruised? These two also have a slight yellowy look to them as compared with the other cakes.

I'm also wondering if the light I'm using might be stressing the cakes. I've read that 5 minutes of direct sunlight is a good pinning trigger, but that prolonged exposure to direct sunlight is bad for cakes. The light I am using is a full-spectrum light, meant to simulate daylight. It's really bright to look at, and I've kept it on for upwards of 10 hours a day.

Any thoughts on either of these two matters would be appreciated.

They are probably so badly bruised because they are dehydrated.. Did you dunk them for 12-24 hours.

Yes I did, for 24. Then they went right into the FC. The RH in there hasn't dipped below 80% since, typically stays near 85-90%. They've been in there for a week.

If my light is too much for them, could that contribute to dehydrating? That thing is bright and throws off enough heat to feel, though the temp in the FC has been between 75-80 degrees at all times.

U just answered your own question Rh needs to be almost 100

ya plus your light should be natural or a Compact flourescent 15W regular bulbs give off the wrong light spectrum

Also if those are 1/4 pint cakes(It looks like it) they need a little extra moisture then the bigger fellows. The bruising is fine but do as everyone says, and keep em hydrated.

Your fruits should not be put in direct sun light longer then 30 minutes or so.. Also you want to use a 6500 Kelvin bulb for best results..  But this would not cause bruising.

Maybe I should mist more often? I've been worried about misting too much, not wanting to drown the cakes. Aside from that I'm doing everything else that I should in order to keep RH up--the FC was built by the tek down to measuring out the spacing for the holes with a tape measure, there's plen-tay of wet perlite in there, and I've got a humidifier running in the room, keeping the ambient RH above 60% so the FC doesn't lose too much moisture.

I'm not using a regular light, I'm using a full-spectrum lamp. That's in my OP.

If you shotgun was built right then it should easily maintain 95% or higher without misting..  Your should have put 1/4 inch holes 2 inches apart on all six sides.. Also the shotgun needs to be off the floor so wind can get under it..

Quarter-inch holes, two inches apart, all six sides, check.

Did you soak the perlite really well in water ?

How many inches of perlite do you have in your tub ?

I filled up a pasta strainer with perlite, drenched it and let the strainer sit for a minute or two to drain, then dumped it in the tank and repeated until I was done. Actually, when I first set the FC up on its wire shelf, it continued to drip a bit for an hour or two. Could my perlite have been too wet to allow airflow? But if that were the problem, it should have remedied itself after a week, right?

Are you using a digital or analog  hygrometer ?? 

Because there is no way your Rh should be that low..

It's an analog. I calibrated it by soaking it in a damp paper towel for an hour and then turning the dial to 100%. Actually, I'm getting ready to try another method overnight that might be more accurate--the one where you seal the hygrometer in a ziploc bag with a bunch of wet salt for 8 hours and then set the dial to 75. I'm gonna see how the hygrometer reads inside my tank after that--maybe it's just not calibrated that well.

It's not a cheapo, either, I spent $20 on it.

I had a shotgun that wouldn't hold 99% RH even with 5 mist/fan cycles per day. I solved the issue by covering up some of the holes on all the sides. I personally would re-dunk the cakes and roll them again in dry verm and I would probably rehydrate the perlite but I'm pretty anal about things. The depth, rack and proses sound fine but you RH is much to low to promote fruit growth in cakes.

It's funny cause the cheapo's have always worked wonders for me I had the same analog I bought for like 8 bucks for almost 2 years.. I soak a wash cloth then ring it out and wrap the meter in it for 2 hours then set it at 100..  I am not sure why your Rh is so low cause it sounds like you are doing everything correct..

Yeah that could be but I wouldn't think a light would put out that much heat..  Try switching it out for a compact fluorescent in like a small desk lamp and just set it on top of the shotgun.. Make sure it's a 6500 kelvin bulb.. It's worth a shot..
