my rye is wetter after PC than before!

i followed "let's grow mushrooms" instructions perfectly (soak,simmer,strain and PC) and got a nice dry rye grain. i even tested it on a napkin. than i pressure cooked for 1.5 hours and found my grain wetter than at the beginning! it now sticks a bit to the sides and i can see the water mark on the glass, although they are pretty easy to shake and don''t clump. how can this happen? where might i have gone wrong? is it ok to use if it separates ok although the water marks against the glass?

It's fine. Your jars were covered tightly with foil, right?
Then it's just that the moisture inside isn't evenly distributed.

sure i covered them. anything i can do to avoid this in the future ?
i shaked after 6 hours cooling, they weren't very warm anymore...

all you have to do is shake multiple times while cooling and that moisture will stay very well distributed. It also keeps your grains from sticking together.

You should at least bring it to a boil, it'll drain better. How long to boil is a different question. "Zero to ten minutes or as needed", is the answer.

Completely not needed if you have prepped the grain correctly. But if you need to, you need to.

i never had a contam, and i never simmer. it seemed to give me 0 colonization, and then when i tried a batch with no simmer all i had was success from there.

what about the soak? ive done both and combined each method together and different combinations but im still too green to have a real preference.

last quarts i did i rinsed well, simmered for a good 20 minutes, rinsed again and then PC'd. they worked well.

so no simmer just a soak and then PC? the few jars i let soak actually fermented and the ferment survived the PC.

nasty.

Boiling/simmering will do two things- it will help your grains dry better, and it will kill off smelly bacteria you are about to pour down the sink.

The point of all of this is to get the moisture content right, and there's lots of ways to do that. So then secondary considerations come into play. Is it easy? Is it safe? Is it fast? Is it reliable.

For most growers, most of the time, soak+simmer will give a better final product than either alone.

moisture content and quality of the grains (not mushy/ not too dry) is the main thing right? other than that it seems the method is a matter of preference.

i know im reiterating but thats basically what you are saying right, Doc?

Right. Once you dial in a method that produce the desired results, you're done. It's just that for most people, that's easier if they do both, soak and boil/simmer.

4 hours seems to work well for WBS, because it is small. Rye is bigger, ok to go longer.

About 10 minutes or until it is done al dente.

Too long? If they start to sprout or smell bad. But after 24 hours, they probably aren't going to absorb any more water.
