Once bulk sub is pasteurized, is it ok to work in a non-sterile enviro?

SWIM is spawning to rye grass seed with cubes, and using coir/spent coffee grounds as a bulk substrate in a monotub.  After the coir/coffee is pasteurized, is it okay to handle and layer it in the monotub in non-sterile conditions?  Maybe just be clean but not still-air?  Or will I need some kind of still-air/flowhood for when layering the RGS in with the coir/coffee?

If if needs to be sterile, what's the best practice for keeping things from contam?  SWIM doesn't have a glovebox because he's using self-healing lids.

Sorry, a noob question on first grow, couldn't find a definite answer through the search.
