Omelettes are just one of those things that I could never quite make properly, but I had an epiphany whilst watching an old Julia Childs episode. By jove, I think I've got it!

Butter instead of olive oil, and lots of it! Julia Childs just slices off a big chunk o' butter and throws it in the pan. Then you have to let get brown and bubbly before you throw the eggs in :smile:
