Sun Dried Tomatoes?

Will they really dry in the sun without rotting?

Every time I see stuff dried in the oven, it tastes very bad.

I'm assuming a dry climate is necessary to sun-dry without some kinda rot.

I like the extra-rich taste of tomato pesto and don't remember the last time it rained here.

We just dried some tomatoes last week. I live in Louisiana where the humidity is pretty much always over 90% or higher. All we did was cut the tomatoes, salt/season them. and lay them in what looked like window frames with screens on each side. Laid the slices on paper towels between the two screens and left it in the sun for a day.

I'm surprised that tomatoes don't stick to paper towels, but I have definitely seen a salt rub draw water out of fresh veggies.

As long as the tomatoes are fresh the paper towels seem to work ok. We usually flip them one time after about 30 minutes in the sun and then remove the paper towels. Maybe I learned to do it that way because there's a chance it would start to stick once it begins drying? I'm no pro or anything, I just know it works really well in high humidity areas.

I'm in a desert pass, between mountains. Our dry winds are occasionally hazardous for their intensity, and wildfires are seasonal here.

Short of a rare event, it will not stay humid, here, for long.

I've just never tried to dry a tomato before.

when I oven dry them i do it at a low temp for a while.


I generally throw some salt, oil, balsamic on it.



If you roast em too fast they'll turn into mush.
