Preserving Hericium

Hey everyone, I found a huge amount of hericium americanum today (will post pics later) and i noticed that in the past, drying has led to a bitter flavor in this mushroom. I was wondering if any other hericium lovers had a technique for drying it out without the bitterness.

store them in the fridge if you plan on eating them soon, if not go ahead and cook them in butter and freeze them, I have not tried this but heard it works well.

Fry them up with a little bit of salt and grape seed oil, then freeze.  I don't flavor them much when I am frying them to freeze, that way I can make them into whatever I want when I rehydrate.

I found a lot of lion's mane today too.
What is your technique for drying them? Food dehydrator?
I love the flavour of these fresh, and have been selling to fine restaurants any excess I have come across.
