my troubles making chocolates tonight

Excuse the long post I am trying to be detailed in my descriptions so that I can get accurate answers.

Earlier I was trying to make some chocolates with 1.63g per chocolate. I used a silicone ice cube tray with 12 molds in it.

To make the batch I squeezed as many Guiardelli (sp?) chocolate chips into the molds as I could fit, then put two chips on top of each of the 12 molds to cover the air space that was obviously in between the chips. (Each chip is quite large).

I then heated the chocolate chips in a double-boiler on simmer until they were all melted, then I placed 19.6g mushroom in a semi-powder/chunk form into the pot with the melted chocolate and stirred. Immediately I noticed that there was at maybe a 50/50 ratio of chocolate to mushroom and as I stirred it became more apparent that this ratio wasn't working correctly for me because the chocolate had tons of little pieces of mushroom in it.

I then tried to transfer the EXTREMELY sticky chocolate/mushroom mix into the 12 molds of the silicone ice cube tray. As I did this I was packing the mix down into the individual molds quite tightly, and soon found out that I didn't have enough chocolate/mushroom mix to make all 12, so I had to settle with 11. Even after taking some of the mix from the more tightly packed molds and putting it in the lesser filled.

These 11 molds are now chilling in my fridge, definitely still active and whatnot but I am still upset.

Before I began I assumed the chocolate would have been  liquidy and easy to manage with the mixing of the mushrooms and then the transfer into the ice cube molds. Instead the chocolate was almost a creamy peanut butter consistency combined with a choc full o' mushroom appearance. The chocolates are ugly and not quite the way I imagined them.

What do you suppose went wrong?

As for your troubles, I suppose you could try a milk chocolate. Might stay smooth longer.

Ghiradelli is really expensive and crisp and doesn't melt as easy, as say hersheys goes soft on you just trying to eat it. You might have burned yourself by going all out there.

first off this isnt the forum for that, but before it is moved ill add my input.
every time i made chocolates for friends i have the same troubles, i have found it alot easier to take your dose roll it into some peanut butter then cover the peanut butter in melted chocolate. everyone loves them.- just make sure to mention there is peanuts in there so there is no allergic reactions

I dont think your chocolate was hot enough
also could be the chocolate you used

i always get the semi sweet chocolate chips(like the ones for cookies)
heat in double boiler then mix in the shrooms

after that's done pour and scrape all the chocolate into a piping bag

then fill your mold
its really easy and you get a great looking product

give it a try sometime

i like the peanut butter idea... you could also use a small ammount of cooking oil, or melted butter to "thin" the chocolate..

2. Remove from heat and stir in the vanilla, oats and sclerotia. Turn onto a well greased 10x15 inch jellyroll pan or any cookie sheet with 1 inch sides. When cool enough to touch, grease your hands and pat the mixture down flat in the pan.

3. Refrigerate overnight. Let stand for 20 minutes before cutting into squares.

The tinniest bit of water will "cease" the chocolate and make it stiff like that. Make sure your shrooms are 100% dry and add a LITTLE cooking oil.The oil always helps me just start with a few drops and gradually add more until the consistency is good

It is possible water could have gotten into my chocolate because my top pot wasnt a super tight fit inside of the water pot. When I used this technique with for making butter,I use the same two pots to melt the butter/plants at a higher temperature and while the water is boiling I know that sometimes when the bubbles pop they drip into the top pot.

However, I thought that was unlikely because I ensured that the water pot never went over a simmer..

You could also use a bigger mold so there more chocolate to shrooms.

let it cool longer. it'll thicken better and not be sticky. it is much much easier to handle/less messy when it cools.

Do you think it would still work if I put a kitchen towel stretched over the pot with boiling water and then set the pot with chocolate on top of that?
