optimum time to fruit res-effect?

I got a nice tray of 2 parts rye mixed in with about 1.5 parts vermiculite cased with Jiffy seed mix.

I was wondering how much of the casing should be colonized before going into the fruiting chamber. My casing has mycelium poking everywhere and I was told that 25% coverage was enough to start it through a rez effect log. BUT when is the best time to start fruiting? Once the casing is nicely colonized? Of course it can't be overlayed with mycelium.
