So evidently some conditions aren't perfect, they didnt really start developing the spines and its been about 10-11 days in the GH..
But they looked nice and big, not to mention tasty! So I picked them:
  
This is everything off of 2 bags, came to over 9 1/2 oz.

Awesome. What did you end up doing with
the Lion's Mane?
Last year around this time I cloned a wild
specimen from the forest, and so far all I've
got it to grow are small 2mm primordia. It
took nearly forever to cover a plate, and even
then it was hardly even visible - very thin.

lions mane is usually pretty anxious to get going in my experience. I'm also curious to know what you did with it.

Thanks all for the replies!
I am actually having trouble making a decision with my suppl. sawdust bags. Or more like Im clueless as to what to do next...
Heres whats up:

So they are totally pinning in the bags, those are all the bright white splotches, but they are nowhere near full colonization. There is a lot of the wispy mycelium, Id say they are probably 60% +/- total.
I think the pins will be okay for a while, but if they are ready to grow fruits, then should I cut some of the bag away and let them at the fresh air. It is supplemented sawdust (easily contamed) so Idk...

Unusual they would be fruiting in such a state. ?
What kind of temperature have you been incubating
them at? Normally this is done at 70-80deg F.
You may be able to return them to a vegetive state
by kneading the bags to break them up a bit, or
depending on their conditions, warming them up.

Its been in those temps since spawning. I just checked the Hi/low on the digital dealie in my growroom, lowest temp was 69.4.
Could over-supplementing cause this? I think I used ~15-20% wheat bran, but then I spawned w/ 600 ml. of grain spawn per bag...
Not making this mistake with the shiitake however, trying several different levels of supplementation from 0 to 10%, then using grain spawn as the supplement. The shiitake jars are ready to burst tho, they go to sawdust today:

Nice posts ManaShaman. I have seen similar results with lions mane. The early fruiting may be due to slightly over incubated spawn. Spawn should ideally be used as soon as it flushes white. If it starts to pin in the jars, when you transfer to fruiting blocks, I have seen a combination of colonisation and very early fruiting. At the stage your bags are at now, I would open a couple of small holes over primordia sites in the best colonised areas. Primordia will emerge from the holes and develop, and the mycelium will carry on colonising the rest of the bag. Lions mane will grow out of microscopic holes, but I have had them fall off under their own weight if the hole is too small. I usally make 4-5mm holes. They seem to need high humidity when the emerging primordia are small, but are not so fussy when more mature. They also like good FAE. Without it you can get fluffy, diffuse fruitbodies that are difficult to cook. Hope this helps

I'd say those bags are at 100%. That also looks like my strain(which has been circulating a lot lately), which pins as soon as it colonizes the substrate.
Lions mane is a very thin and whispy mycelium, so it doesn't always look fully colonized when it actually is. Here's one of mine fruiting, and as you can see, the bag doesn't look fully colonized. . .but it is.

Nice thanks RR and lionsman! That was very helpful.
So two of the bags I shook/mixed yesterday. Im thinking now that I probably could have just fruited them, but we shall see.
The other two I put into the GH.
There were some pretty big primordia sites on one that I cut holes over, and the other I just cut the top off, turned it on its side and elevated it with a plastic container, as well as making some smaller holes on the sides. Well see what happens!

hey, new to shroomery & i can't find a place to ask this, saw your post so thought i'd try ya: i found some lions mane growing at my local park, looked at it for months (or since last year?) and didn't i.d. it till recently. so, it does taste like lobster, but also has a bitter aftertaste. is this because of it's age? (did have some beetles, i removed them and all of their tunnels through the mushroom flesh). is there some way to prep it to eat that can help with that annoying aftertaste?
oh yeah, & what's the best way to store it for later use? (got over a pound from each of two growing on the same dead tree). thanks in advance for any help, and once again apologies for asking this question here, didn't see another place to ask it.
btw looks like you got a lot in the works; hope it goes well for you.

Cant really say for sure, Ive never prepared lions mane, these are the first Ive had. I would imagine the fresher specimens would be better tasting overall.
RR says they're good with a white wine sauce, there's probably some butter in there, Id add garlic and maybe some minced shallots.
Looking at mine is making me hungry!
As for storage, Id dry them, maybe chop them first then re-hydrate in a sauce of some sort.
This is all just speculation of course, Ive never dealt with them before, but I am looking forward to doing so!

hey mana shaman, thanks for the reply! the preparation methods you mentioned sound really good. i'll try the rehydrating & cooking in a sauce, too. what i still have fresh i think i'll try sauteing in butter (like the first time i tried it) and afterward add a dash of lemon juice right before eating-it occured to me today that this might mask the bitterness perfectly and give a different 'tone' to the aftertaste...i'll let you know how it turns out!

Update on main post! I picked them all off the first two bags, and there's 3 more right behind them.

Im planning on doing a couple different things, they sure do look tasty! Pretty sure its going to involve some bacon fat..

hey manashaman,
awesome, glad to hear it! we just went today to our local park and poked around for a couple of hours, found a handful of oysters (pleurotus ostreatus), a younger lions mane (softball sized; sauted in butter on low heat for a while) which was not bitter at all! we also gathered a couple of clitocybe odora (blue cap, distinctive smell of anise) and some coral fungi (clavicorona pyxidata). not to mention some fly agarics-but that's another page.

hope you post some pics of prepared lion's mane before you eat it, i'm sure everyone will enjoy. : )

OMFG! These are the best mushrooms I have ever eaten!!!
Heres how I cooked them:
-Melted some butter in a saute pan, maybe 2 tbsp.
-threw in some lions mane, chopped
-waited till they got a little tender, started to brown a little
-hit it with some chardonnay and chopped garlic, let the alcohol burn off, let them soak it up a little
-removed from heat, put a little more butter in the pan and swirled it around (mounted w/ butter)
Finished!
Sorry no pic, I ate that shit to fast!

Are they re-useable?
Do you need special equipment? For sealing the tops, perhaps...
