So I had two jars in question that looked that it got cobwebbed. Different color - greyish very hairy like strands in the jar. Now it looks all white mycelium. Could the mycelium eaten away at the cobwebs?

Probably was just thin myc networks. Mycelium can vary from REALLY white dense and fluffy, to more stringy rope-like, to grey thin growth.
The only thing consistent between the different growth types would be the time that it takes to colonize. A jar of cobweb would probably colonize in a day or two. Mycelium takes much longer.
If mycelium *did* beat out the cobweb, it should be safe. (Note: I've never had cobweb mold, just read a lot about it online. )

I've had jars that I wasn't sure if it was cobweb or not, and I just let it go, and it eventually started looking like mycelium, darkened up to a more solid white, so I thought they might be ok. I was wrong. I opened it up and it was clearly not mycelium. This may or may not be the case in your situation, I'm not sure, but I'd be careful. Cobweb is very vigorous and fast growing, way faster than mycelium, so I find it doubtful that mycelium would be able to reclaim a territory that cobweb has taken over. I could be wrong though, I'm not sure.
