Yes, you can use your PC vessel as a large kettle for pasteurization. The lid is not necessary.

I suggest you invest in a probe-type thermometer to check water temperature and the temperature in the center of whatever you're pasteurizing. You simply adjust the heat setting on your stove to maintain proper temps.

You need to keep the center temperature between 140-180 degrees without your water temperature going much above 180 degrees. This will help ward of contaminates without killing the beneficial bacterial flora.

That was a good answer.

The 140-180 will determine your cooking time.  140 will need hours, 180 will probably need much less, under an hour probably.  160 for at least an hour is pretty good for a relatively clean material.

And cook time is from the point you get your crap to the cooking temp, not from the time you start heating it.
