Poor little guys are trying to grow towards the light. Put a big bright bulb directly overhead, a daylight CFL or something with a temp range of 5000K-6500K.

Some mushrooms do, some don't. Cubes grow towards the light, and apparently use the light somehow to make more and better fruits.

You need a better light, too. The stems are gnarled and not well-formed. 5800k - 6800k or so is the optimal range.

I don't know if fruits laying on their sides is ever a good thing, but I had a fruit that tried so hard to get to the light -- he went sideways from one end of the FC to the other. The fucker measured out at a healthy 9 inches when I plucked his ass.
He was my biggest ever.

That's right, the color spectrum. Cool white might be ok, or a little low. 'Daylight' bulbs tend to be a little better. Check the manufacturer's specs, or it might be printed on the bulb.

The way you have it set up is just fine. Side lightning on the monotub will cause them to grow sideways, but they'll be no worse off than if it was on top. If I remember right each of those 4 ft bulbs is 40 watts... 80 watts of daylight labeled bulbs should be the perfect light source.

If it doesn't give the color spectrum, make sure it says daylight. Ones that say kitchen or under cabinet are probably in the 3 to 4k range (yellow).
