what kind of compost is it. i'd set it outside to air out like you do with fresh horse dung.

no it is store bought, but it is composted cow manure from a local (state) vendor. When I opened the bag it smelled a little like ammonia. I thought this was odd.

  yes... You don't want any ammonia in compost that you are going to use for mushrooms.  You can either do what concretefeet said or if you do water pasteurization then what little remaining ammonia that is in the compost should be taken out as it is nicely soluble in water. 
  Ammonia smell just means it wasn't composted right or isn't finished.  Or both.  :smile:

is it pasturized? I've had colonizing substrates that had a little amonia smell to them. Just fan more frequently.

no it just smelled like ammonia out of the bag I bought. I've read in Stamet's TMC about pastuerizing correctly so ammonia producing bacteria will not become active. Is that what is going on? Ammonia producing bacteria are active in this compost? Should I buy from this vendor again? The compost was really earthy and left my pasteurization water like syrup! I thought it was a good compost except for the smell when i opened the bag.

Localy produced compost is not made for mushroomgrowing even if it serves our purpose.. :wink:
The ammonia smell a probably from the manure..containing what?
Cow poo..yup...and cow urine..probably, wich contains ammonia...i wouldnt think it?s ammonia producing bacteria causing the smell..pasturiazing it well will take care of the problem anyhow.
It all depends on how the compost was made.

the ammonia is probably from urine in the dung. whereever your compost came from the animals were probably so packed that they shit and pissed in the same small place and have the dung soaked with piss. when i clean my horses stable out the dung smells of strong ammonia but the dung thats in the pasture just has the normal grass/hay smell
