Chicken of the woods?

I believe that these may be Laetiporus cincinnatus.  I found them under a few oak trees in the Southeastern USA.  They were in rosettes under the trees, have orange edges with a white pore surface.  I actually cannot even see any pores at all.  Sorry for the dark pictures, I found them when the sun was setting.  Please let me know if I need to provide more information.  I am making a spore print now.

Laetiporus cincinnatus is more likely if they have white pore surface rather than the bright sulfur yellow.

These did have a white pore surface.  I read that L. cincinnatus is also found in rosettes instead of in shelves like the Laetiporus sulphureus.

yes that is true mc about the rosettes.

it seems to me like L. cincinnatus. the coloring is awful but if you say they have orange edges it would fit the description.

i don't think that is correct, as L. cincinnatus was speciated largely on the basis of mating compatibility testing and genetic analysis. it think it's more likely that yellow forms of L. sulphureus, or another species can also produce semi-albino growths in their clusters which resemble L. cincinnatus.

this seems no unlikely as i believe the western semi-albino form i've found to be L. sulphureus/gilbertsoni, and as L. cincinnatus is an eastern species.

Beautiful find.

I'm not sure how far southeast you are, but I'm in New Jersey and been finding a lot of these. I've been eating them almost every day since the beginning of July.

Since you're new, here's what I do with these mushrooms:

Harvest it right away, while it's still tender, and before it gets tough/bugs get to it/a kid kicks it/it gets hit by a lawn mower. When you harvest it, leave the bottom layer of fronds. It's usually tough, buggy, gritty, and has grass growing through them. Furthermore, it's nice to leave a few fronds to spread spores for next year.

Marinade them in chicken stock or some other tasty sauce for a few minutes before cooking. One nice thing about these mushrooms is that they soak up flavor very quickly.

I like to cut the fronds so that they still look like a chicken mushroom when they're cooked. They make a beautiful presentation. They can be grilled or baked in a nice sauce. If you're going to pan-fry them, slice so that they fronds are flat, so that they lay nicely in the pan. Sear them on both sides to kill any bugs.

I like to make the mushroom the centerpiece of the dish, with mashed potatoes or rice and broccoli or other green on the side. Of course, you can place a frond atop a steak for an amazing embellishment.

Of course you can slice them lengthwise and stir-fry them, but then they lose their distinctive appearance.

I'm sorry, I don't fully understand what you're saying.  Do you mean that you believe that what I found is an albino form of L. sulphureus?

Personnally I'd say L. sulphureus; regardless, to my knowledge, there are no poisonous look-alikes. Whether Chicken or Rooster of the woods (L. sulphureus or L. cincinnatus) they're both great on the grill.

no, not at all.

i said the white pored form i've found [since i live on the west coast and outside the range of your eastern species] are probably of the sulphureus or gilbertsoni clade.

i already said that your are likely L. cincinnatus as you've guessed as long as there was no yellow.

yum! this is one of my favorite mushrooms to eat. and i have not been too lucky this season. the bugs get to these quick! one of the most tasty. can they be indoor cultivated?

Thanks for the info tan, I've been looking for some cooking ideas other than pan frying.  I found that hard to do since its a wavy mushroom.  It can be hard to get them to lay flat.

I'm from North Carolina, I actually found a full size paper grocery bag full of them.  Does anyone have any experience selling wild edible mushrooms?  I have more here than I could possible eat.  In addition, I've been finding more chanterelles than I know what to do with.  I'd like to find someone that could use them and maybe make a couple of dollars too, but I have no idea how to start.  Is that possible?

the chantarelles will be easier to sell, but if you find a buyer, offer the Laetiporus as well.

try every grocer you can find, and remember you want to talk to the grocery manager. restaurants are a good bet as well. it's just about networking.

i don't know how it's generally done in your state, but in oregon i found the sales handled by intermediate buyers, who offer far, far less than they sell the mushrooms for.

Dry them! In the middle of January they'll be a nice treat.

Since I don't have much experience yet, I'm not sure if a grocer or restaurant would take me seriously.  Then again, its worth a try.  The only other idea I had was to put an ad on craig's list.

Oh yeah, good idea.  Do they still taste as good dried and rehydrated?  I froze the last batch that I found, but I don't have too much more room in my freezer.

if they are willing to buy chants from you, they will near-certainly know them when they see them. in such case, they won't care whether you are inexperienced, they'll just want to know how little you will take for them [though they probably won't word it that way].

They can taste even better. IMO drying is the best way to preserve mushrooms. They don't take up freezer space, when you reconstitute them in chicken stock or some other tasty liquid they pick up even more flavor, and it also improves the texture.

The technique has been around for centuries.
