Applesauce tek.

So I'm building a house on a lot that has 2 huge apple trees starting to dump it's apples.  I hate to see these things go to waste, but unfortunately they're not really good "eating apples'.  They're a bit sour, and mealy.  So.  What to do?

I present Applesauce 101.

Step 1:  Core as many apples as you have, or think you can fit into your biggest pot.


Step 2: Don't add anything.  Cover and bring to a simmer, reduce to medium low (the hotter you go, the more you have to stir.)


Step 3: Stir occasionaly making sure nothing is getting stuck to the bottom.  This is at about 30 minutes on med-low, stiring every 5 minutes or so.


Step 4: Keep cooking until most of the apples are mush, and the rest are easily smashed.


Step 5: Add sweetener if needed and cinnamon if desired.  (My apples were pretty sour, so I ended up adding a lot of this honey.)


Step 6: Put in strainer over large bowl. Mash apples through the strainer with a firm spatula or a wooden spoon.  This step would be way easier with a food mill.  Or if you peeled the apples first, you could skip this step.


Step 7: Here's what you're left with.  Dispose of skins in compost or garbage, or dog.


Step 8:  Divvy up into reasonable size containers.  If you have canning equipment, that would be appropriate.  It also freezes very well.    I find it lasts about 2 weeks in the refrigerator with no other processing, but it starts making me nervous after that :smile:
