So I'm gonna buy some off ralphsters and then use these grow bags + the instructions cause it looks pretty simple:

What variety of spore (in the syringe) should I get? Does it really matter?
Also, how many bags should I get for say 20-30 grams worth of shrooms?

A cube is a Cube Pretty much all the cubensis strain are as good as each other

treasure coast and B+ have worked best for me in bags not all do well with the the little amount of air in the bags

What's a flush?
Is that a "crop"?
Can I re-use one bag (like from that website I linked) with the same grain stuff over and over?
How many grams of shrooms could I expect to get from 5cc of spore injected into one of those bags?

Yeah, a flush is one crop. You harvest it all at once and then rehydrate and go again for another flush.
You'll get a lot of conflicting info asking about strains.
I like cambodian and puerto rican for potency. B+ is popular because its big and robust, but for some reason B+ occasionally puts out really weak shrooms. But don't take my word for it, search the forum. I found the pf classic to be rather lackluster as well.
The current fad seems to be penis envy. It seems very aggressive with nice fruit clustering.

just pick one that has an interesting history which surrounds the origional location the strain was discovered; or a name that sounds cool.

bags don't do well with just any cube i make my own and do 1 of them for every strain i try and i am just saying that so far TC b+ and GT have done the best

Reason:
There's a 'strain thread' as a sticky at the top of the page. The name on the print or syringe is irrelevant, and has little to do with strain anyway, since a strain by definition is a pairing of compatible hyphae. The only way to market a 'strain' is to sell cultures, not spores. That's why we say a cube is a cube, and it's a fact.
