Well I was just bottling my first batch of mead and tried a glass...all I can say is WOW!!! :eek:

It far surpasses my wildest expectations! I made it with store-bought pasteurized honey, too, which is supposed to be just "passable" for mead making. Wow!

Can't wait to get some started from unpasteurized local honey!

Freshman year I made mead in a gallon jug in my closet. It tasted like shit because I didn't filter out the yeast but I don't regret nothin'.

I used champagne yeast (lalvin EC 1118)...mostly because it was just what the wine shop closest to me had :smirk:

It took about 3 months for it to fully ferment. I started it back in march.

my friends sister is always making mead and pulls it out during pagan holidays. ive hung out with them the past 2 winter solstices and both times drank their mead.

omg. so good. no hangover if you make it right apparently. you can drink as much as you want and no hangover. she found a bottle of 5 year old mead once and we drank that. extremely sweet tasting stuff and it makes you feel soooooo good. they gave me a bottle last year, but it didnt last long.

Actually to be exact, there are 23 kind of honeys out there:
Orange Blossom
Wildflower
Sage
Pumpkin Blossom
Heather
Eucaliptus
Clover, etc...

The only kind of honey I've ever found in a grocery store is clover, or at least primarily clover.

You have to go to farmers markets, or directly to the apiaries, to find anything else (around here).

If you have the champagne yeast slurry from
this brew, you should try to make hard lemonade with it.
I have to dig up the recipe, but basically frozen lemonade like minutmaid,

water and sugar, and ferment it with the champagne yeast.
I've made one batch years ago, and it puts Mike's
Hard Lemonade in shame...
