the pressure cooker i actually use dosen't show the temperature or the pressure inside... and i don'y really understand what you mean by "pop open once the food is ready" but any pressure cooker should be okay... put 2cup of water, add your jar seal it and heat at medium on the oven for an hour...(start with high and when the steam starts to come out by the (dont know the word for that but that's the little hole with a kind of cap that spin when the steam pass trough) then bring you oven to medium/high... and that's it!!! really easy...

About 15 PSI at 45 Minutes will get the job done..GoodLuck!

Look on yahoo auctions for "pressure cooker" there are less users, so stuff is cheaper than ebay. Get any generic one without any gauges. It will be 15 psi, and perfect for your needs. I got mine used for 5 bucks on yahoo. It holds four half pint jars and works fine.
