Hi, i have been attempting to steralise pint sized jars of rye with an autoclave. But as most of the info on the web talks about pressure cookers i am a bit confused.
So far i have had two attemts, the first used a steralisation temp of 123 degrees for an hour, in this case the hour began when the autoclave reached temperature. This resulted in jars which were easy to shake. HOWEVER.. contamination in the form of bacteria buggered the jars, (although this may have come from the spore syringe) #The second attempt was an hour at 136 degrees and the time only began ticking when the rye itself reached temperature (i used a temperature probe in a dummy jar of rye) this resulted in the most gooey sticky mess ever made. can anyone who uses an autoclave help me please with temperature and time reccomendations thanks in advance

well find a chart with the psi and elevation to see what temp that would be at your home town?

Well, from what I've seen what you want to attain is 250?, thats what temp 15psi reaches.
