I love the Pho

I find that the more stuff I cram into my bowl, the better it tastes! Today was your standard steak pho, added bean sprout, thai basil, wedge of lime, hot sauce (enough to break a sweat), plum sauce, cillantro, and a few chillis.
I've been thinking of getting a bit more adventurous and trying the flank, brisket, or tendon.. But I'm not a big fan of "chewy" meat, so I've always shied away from them.

How do you take yours?

I love pho.
There are more than a few good pho places around here.
Try the brisket, it's fucking delicious.
The tendon is a little much, especially with your preferences.
Don't try the eye.

I want Pho so bad but I dunno where to get it. Every ethnic place around here is too americanized and doesn't really cater to us adventurous eaters. I wanna try some tripe or goat testicle pho.
