Tin foil

After inoculation of the cakes should the tine foil be left on or off of the jars, are they to be air tight or should they be loose to allow some humidity to escape?
AND
If the bottom the substrate is burnt when it is being boiled on the stove should the whole jar be thrown out or can the bottom of the cake just be removed when the cake is ready

I leave the foil on as an extra layer of protection. I also keep the lids tight, but not too tight. If you burnt the bottom of the jars, toss them and start over.
