Today Ive been marinating some London Broil and Im gona have baked potatoes with it and broccoli.....
So I figure since the Steak is soo big I should have Fried Rice with the leftovers... In order to do this I need to make the rice today and cool it untill tomorrow..
My Fried Rice...
First off I use a Fried Rice seasoning packet. Anything from the grocery store that says Fried Rice on it... Next I will cut up 1/3 onion (shallots preferred) 3 cloves garlic 1 Tbsp Fresh Ginger (Sliced not grated) 1/2 small bag of frozen mixed vegetables. Frozen veggies work best for some cooking, they dont get mushy and keep their flavor. Leftover London Broil, potato and broccoli. Bunches of sliced mushrooms.. Any Kind 1 small can oriental veggies (bamboo, chestnut, baby corn, all that jazz)
Heat three tablespoons oil in a pan, add mixed veggies, onion and beef. Saute for a minute over HIGH heat and add 2 Tbsp Real Brewed Soy Sauce. Add chestnuts, mushrooms garlic, ginger and anything else you want and saute until heated through and slightly browned...
Remove from pan and put into a bowl with foil to keep warm. Prepare fried rice per instructions on seasoning packet omitting other ingredients.
Once rice is sauteed and mixed with seasoning, add your bowl of goodies and saute to heat through and serve with soy on the side.....
I like to make my rice and veggies/meat separate and mix them at the last minute... This just adds something to the flavor and makes the dish have diferent tastes with each bite......

fried rice is best made with 1 day old rice. Fresh rice has a different consistency than 1 day old rice (this is what an old wise man told me - my daddy )
This is how i make my fried rice
wok 2 cups of 1 day old rice 3 cloves of garlic finely minced vegetable oil soy sauce optional: vegetables such as corn, green beans, diced carrots
coat the wok with vegetable oil and allow for it to heat on the stove. put in your finely minced garlic into the oil and let it cook for about 1-2 mins. add in your rice and stir. Let the rice sit there so that it can suck in the flavour of the roasted garlic. then, add some soy sauce while stiring. next, add your veggies.
that's it...simple chinky fried rice
