fruiting cakes

I will have about 9 cakes 100% colonized within the next three days. Planning to wait one week after fully colonized to birth 7 as cakes and crumble two for a casing. Leaving for vacation the 18 of Dec. Will be able to harvest and dry them by then or should I leave the jars in the fridge?

The cakes will be in the middle of their fruiting cycle and the casings will probably be starting on their second flush, I'd say just put them in the fridge, and if you really want fruits for the holidays, birth two or three cakes, and when it comes time for you to leave, just put them in the fridge then.

has anyone else had expeiences that would fit including the drying in this particular time frame?
