Casing Humidity and Deyhdrator Temps
    #1080421 - 11/23/02 11:55 PM (14 years, 5 months ago)

I have two quick questions. First is about fruiting humidity for casings. I know for cakes you need 90-100%, but I keep reading that casings don't require as much since they retain more moisture. So should I still keep it up around 95%? My second question is about drying using a food dehydrator (such as  this one ). Would it be ok to let them dry at 95 degrees or will I need to disconnect the heater completely? Thanks for your help, my first jars are colonizing nicely.

i think your casings should be fine. i doubt the mushrooms are going to complain too much about the humidity being too high. you might have to pay closer attention to the moisture content of the casing, if you get water-logged brown-striped fruits, then you may want to try misting less.
