Seriously though, vegans are soo hard to cook for you might just be best off ordering a nice vegan meal to go from a local vegan restaurant..

If you want just vegetarian, Ive got some recipes.

not hard to cook for at all imo
i cook vegan dishes all the time
i was basicaly just looking for something new as usual
i was pretty much a vegan for a while a few years back with one of my ex girlfriends who i was with for over 3 years
although i defintily cheated plenty i ate prety much predominantly vegan when i was with her
altho, we never got TOO creative
it was alot of vairiations on stir frys
but we definitly made up some unique dishes here and there but, just the same, i couldnt remember what
theres so much stuff, i mean, im just as well on google looking up recipes, but i always like to get suggestions from the shroomery
so far im thinkin this....ill let you know how it goes....sounds delic tho!
Thai Red Curry with Green Beans and Eggplant
Serves Four
    *  2 Tbs. peanut oil
    * 3 small Japanese eggplant, sliced (1 lb.)
    * 1 13.5-oz. can light coconut milk,
    * 3 cloves garlic, minced (1 Tbs.)
    * 1 Tbs. minced fresh ginger
    * 1 Tbs. prepared red curry paste
    * 2 Tbs. dark brown sugar
    * 1 Tbs. low-sodium soy sauce
    * 1/thlb. thin green beans, trimmed
    * 1 large red onion, cut into 1/2-inch wedges
    * 1/2 cup packed Thai or sweet basil leaves
    * 2 tsp. lime juice

The coconut cream at the top of a can of coconut milk thickens this curry, so be careful not to shake the can before you open it.
1. Heat wok over medium-high heat. Add oil and eggplant, and stir-fry 3 minutes, or until eggplant begins to brown. Transfer to plate.
2. Spoon 3 to 4 Tbs. coconut cream from top of can into wok. Add garlic, ginger, and curry paste, and stir-fry 1 minute. Stir in remaining coconut milk, brown sugar, and soy sauce. Add green beans, onion, and eggplant; cover, and simmer 8 minutes, or until vegetables are tender. Stir in basil and lime juice.

Be careful, as far as I know red curry paste sometimes has shrimp paste in it

Some vegans are too militant about it..  If the manufacturing plant used to can one thing is also used to can a meat product then all of that brand is out.. 

Ive heard some talk about the lubricant used on the machines or the glue used on the labels coming from banned companies making some foods not vegan safe.  Places where hard core vegans boycott because of animal testing and what not, if their product is used in any way with a food product then that food is out.

It goes far beyond just picking vegetarian products off the shelf and making meals.  Anything in a can or a jar or even a tube has to be looked at twice when vegans are involved.

Fresh basil, tomato, onion and olive oil.
This combo is weird, doesn't need salt to taste salty.

Goes well with beans.
