Elm oyster (Hypsizygus ulmarius) harvest

My first time growing these babies. I must have just taken about a pound of rather nice looking fruit off a 7lb bag of enriched sawdust -- first flush.
The fruitbodies seem much more nicely developed than any other oyster I've grown -- I can see why Stamets' comments that this is a superior fruit.
I did notice that the bodies seem to bruise a tan colour....I wasn't as careful as I should have been harvesting.
I'll try and take some pics later for those interested. I will also attempt to take a couple of prints, although I'm not sure I let them get mature enough to be full of spores -- I know a couple of folk here are after an h. ulmarius culture.

Yeah, yeah let's see 'em. Was this inside? I notice that they require similar CO2 levels. What do you incubate and fruit them in?

Here?s some pics. To give you an idea of scale, the large boquet is probably about the size of both my hands cupped together.
They were grown indoors in a CDN$7.00 storage box from HomeDepot.
They look a little mangled now because I have had them squished into a paper bag in the fridge overnight ;-)

Thats cool. So it would seem that H. ulmarius does not tend to malform as does Pleurotas under less than optimal CO2 concentrations. Those look yummy.

Nice aroma too....can't quite put my finger on it....not quite as fishy as some oysters.....kinda a tiny bit sweet, but a clean sweetness.
You can probably see the nice gill structure. They can get quite fleshy too, which I guess would make them good for sandwiches and stuff.
