I just cover it in foil, then once I am ready to inoculate, I replace the foil with coffee filters.

I use foil, and I leave the foil on (loosely) during incubation. Tape is unnecessary, IMHO.

Tape is bad as it can slow colonization because the fungus can't breathe but foils cool.

Below is a quote from PF Tek for simple minds

http://www.fungifun.org/pf/

Take a 5in(12cm) wide strip of aluminium foil and fold it in the middle and put the foil over the opening of the jar. Fold the foil edges up and press them together so you get a nice aluminium foil lid. Then take another piece of foil measuring 5in x 5in in and put it over the first two layers (respectively the metal lid if you?re using lids) leaving the edges of the foil reaching down, since it has to be lifted again during the inoculation. So now you have 3 layers of foil over the opening, only the upper layer is lifted during the inoculation.

That technique is used when you don't already have lids, such as if you're using drinking glasses. One layer of foil over the two or four hole lids is fine.

You can cover the holes with 3M micropore surgical tape. You can find this in any chemist (aka Drugstore).

This tape allows air into the jars, but not contaminants. Much easier to use than polyfill. This allows the mycelium to breath, and grow FAST!

Then cover the top of the jars with 2 layers of foil and pressure cook.

After you've innoculated, remove the foil.
