Cakes are definitely my spawn of choice in terms of colonization time of bulk substrate, but everything else sucks about them for use as spawn I think. 
Yep, Doc, I don't get your analogy. I personally love margaritas, and I think they are an improvement over regular tequila in all but a few cases. But I am just joshin ya...

i think what Doc meant was it doesnt matter what spawn you use, in the end its still gonna be a margarita. or mini-mono in this case.
i've only recently been starting on mini-mono's but i've been using 5.5-7.2 quart tubs..
i was entirely surprised by how it grew and produced..

Margaritas are fun. They're delicious. They are bigger too. But it's the same amount of liquor as drinking shots.
When you look at grow logs where people have spawned cakes, figure the yield based on the number of cakes that went into it. What you'll find is that people get about the same per cake as they would if they had just fruited as cakes. Spawning cakes may increase yields. It does increase time and risk, for little reward. IMO.

Perhaps the correct tequila analogy is my BRF cakes are Patron, and your Grain Spawn is well tequila. Both can be used to make margaritas, but Patron is just fine by itself.

My first attempt at growing was with this method and contaminated before my first flush. I believe the substrate wasn't colonized enough at 3 weeks (I did get to harvest a little though). I am now on my second attempt and it's at 3 weeks of colonization with a different strain, GT. The substrate looks funny because it is coco husk, which I have since decided to never use again.
Should I fruit or should I wait?

Because it is taking 3 weeks to colonize. It is also because of the fact that you are using coco husk, you want coir.

Thanks for the info!
Doc stated upthread he opens his garbage bag to breathe every other day. How long should I have the bags open? I thought leaving them open for any significant period of time would increase chances of contam.
I have another tub going now with coir, I learned my lesson

This is a common misconception. Actually, it's an ubiquitous misconception, so much so that most any new grower starts off believing this myth, myself included, so don't feel like a moron.
The reality of the situation is that restricting fresh air exchange DRASTICALLY increases your chance of contamination. You can do a search around here on RogerRabbit's posts regarding "fresh air exchange" and "pasteurized substrate colonization." He explains it very well.
He also has demonstrated in his videos that there is no need to filter your fresh air during colonization - the colloquial "gas exchange" or GE.
As an experiment, I actually manually fanned these tubs during colonization:
