Yes, 15 Pounds per square inch. Depends on the cooker, some are precalibrated for only one pressure, but most of the common versions use what is called a 'jiggler', a small weight that is placed over a vent in the lid. The mass of the jiggler and the area of the vent are calibrated to exert a particular pressure (frequently, 5, 10 and 15 psi), when the internal pressure of the steam exceeds this pressure, it is able to leak out around the jiggler.

Ok i found the "jiggler", but there's another hole next to it with no weight in it. Won't all the steam just come out of this one? Sorry about all the stupid-ass questions BTW, I appreciate it's hard to tell me how to use a piece of equipment you've never seen

Marc...you may need to seek out another pressure cooker. I'm not positive that this is the case with yours, but some pc's have a little stick that pops up to let you know that it is pressurized...like those little ones in the Thanksgiving turkeys. It's like a indicator that there is still pressure in the pc so that you don't open it up too early. It sounds like your "little hole" might be the place where that little stick used to be. I would doubt that there is much you could "safely" do to seal up that hole. Hope this helps!------------------ Shelter me from the powder in the finger..

You could be right, it looks pretty old... Would you say it's worth me getting a new one, or should I persevere with the steamer technique(last time I tried that i got contamination in 6/6 jars )? [This message has been edited by Marc (edited April 03, 2000).]

If you have about 50$ to spend I would invest in a new one. You could try and go to a local salvation army or thrift store and buy a used one, but you don't know if it will work or not. I have seen them at walmart for around 50$. They are worth it.

Rather than buy a new one, see who it is made by. If it's made by Presto they sell parts on their website for everything they've ever made. It sounds like you are missing the rubber blow out valve, it probably costs about 50 cents.

I recently got a pressure canner from the local thrift store for 12 bucks. I would definetly get a new one if you cannot fix the one that you have. It's worth the money to see all of your jars turn out!
