Look for a hippie commune community type wwoof or one which teaches permaculture - i've heard lots of good experiences...
I think by asking the right questions and refining what your looking for, you can protect yourself from "working for a slave driver.
I would like to move around to a variety of wwoofs (hopefully next summer) - but might pursue a farm internship in Ontario if i can get my foot in the door.
I think with wwoofing you are often seen more as a laborer in exchange for room and board, unless you have a keen interest and a cool farmer/teacher. But with an internship you LEARN alot, while working.....
