I just went out to this horse ranch and the guy there pointed my to a pile of 3 yr old horse manure/compost. I dug through and it is FILLED with worms, smells good and earthy! I was just wondering if I need to go through and pick out the nuggets or can I use the sawdust and everything?

Well its for cubes so nuggets, I'm just wondering whether or not nutes might have leached into the sawdust and if that would also work. It seems like its been really decomposed and well weathered for years, I guess I'll just breakup the nuggets and leave the rest for the garden.

I would just use it as bulk substrate. Pasteurize it, mix with spawn, and put it in a monotub. I was watching a show on big ass gourmet shrooms growers, and they used sawdust.

Sawdust is used for most edible mushrooms. Cubes will grow on that decomposed pile of shit with all kinds of things but in my opinion there's a higher probability of contams. I would just use the nuggets!
