You need to cover the holes as to not throw off your moisture content. Please do not give advice on subjects your not familiar with thank you.

I'm not positive, but I believe he was referring to after steam sterilization has been completed and the jars are left to colonize.  Is moisture content an issue at that point?

i still say jars do not need anything on the lids after inoculation if there is a dry verm layer in place.

Wow I have to disagree with hyphea.

Covering the holes on a PF jar will not allow proper GE and will get the to "dry" verm layer wet,  thus making it prone to contams.  The drying of a pf jar is not that big of a deal,  you are going to dunk n roll right.
Grain jar need the hole covered to keep moister in, I am not saying keep the foil on though.  Also no verm layer in a grain jar.

You've misread totally misread what I've said go back and reread so you have the proper context please. Do you really think I would say to cover holes after inoculating after I've spent the last 6-7 years telling people not to? Now really please a little more credit! TY

FYI I was being critical as in during PCing

Ok, I see a bit of confsion here down to teh cat that some folk use Jars with Lids and some folk use Jars or similar without lids for their PF cakes..

After PC-ing the topmost layer of Foild is removed leaving the lower layers with inoculation Holes
On a jar using the lid with Holes the protctive floil layer is removed and the lid with the holes left in place..

You dont just leave a upen toped jar with teh full layer of verm exposed..or do you, cos That just seems silly if you were to knock it over etc..

If you are using foil as a lid then that is your lid,  not your foil layer.  You remove the foil that is covering your lid,  noone said to remove the lid.
