cake question
    #10593836 - 06/29/09 06:26 PM (15 years, 6 months ago)

Ok so I just realized that your supposed to flip the cake with the dry vermiculite side down. My cakes have been in the fc for 2 days should I flip them? And also they have white fluff forming on the bottom of them is this normal, From what I have read it is but just to be sure thanks

I would leave them be.  The ones you add from now on put in dry layer down.  I would mess with ones in place as little as possible though, personally.

You're supposed to dunk and roll. What dry layer?...

But... before you dunk you are supposed to put it under your tap rinse it well, remove that layer... You then roll it as if you were getting something ready to dip frie and then just put it in the FC. Have you ever watched RR's videos?

I think i know what your saying, The layer will not be dry tho, Because we dunked it right?. As for fruiting it, The tek calls for it to be verm layer down, but i have fruited them every which way you can imagine and it has all worked out the same.

I've read rumors that if you don't the choomys will grow backwards so on and so fourth. Im not saying that's wrong. I'm saying its never happened to me.

If i was you on the next one do it as the tek say's. when you get the knack of it, Then i would suggest experimenting around. I know this was an accident, I'm just suggesting for future reference.
I hope this helps:thumbup:

it doesn't matter... all my cakes were "up-side-down"... I actually found that it worked a little better.  I never removed that verm barrier.. I never saw a reason to.  most people don't even pasteurize their verm before they roll their cakes in it; they use it straight out of the bag.  I guarantee that the verm layer is cleaner than verm used straight out of the bag.

Definitely. The verm layer in the jar has been a filter since pressure cooked. The verm straight from the bag has always been.
