i wouldn't grow pan cyans for your first grow...and if you're going to follow a tek, then follow it. don't go out experimenting just yet. get a few grows under your belt first.
gypsum/lime - 5% total in substrate and 5% total in casing does not equal 10%...unless for some crazy reason your casing layer is equally as thick as your substrate layer, but even then that would still equal 5%.
no need to soak manure overnight.

Use that kite Tyvek, that's good stuff. 
You can avoid casing with the use of some bulk subs like coir. It's worth thinking about. But poo has advantages too.

See, that all sounds so complicated. So many failure points. But there's a huge amount of info here about all of those. As long as you follow the tek, you should be ok.

No. Don't do any of that garbage!
Keep shit simple. Just follow this tek: http://www.shroomery.org/9030/Docs-Wild-Bird-Seed-Tek
Then learn how to pasturize poo. This is a GREAT tek: http://www.shroomery.org/8393/Oven-Bag-Pasteurization-Pictorial.
Then spawn the bird seed to poo in a mono tub, like so: http://www.shroomery.org/forums/showflat.php/Number/8231041/fpart/1/vc/1
Don't worry about a casing layer, or the pH, or adding nutrients, or anything complicated. Straight hPoo works great! Mixing in various amounts of vermiculite and Coco Coir always helps too, the proportions don't really matter much, but you should aim for 50% poo, 25% verm, and 25% coir.

Yeah there are much more simple teks out there for beginners, but experience is experience. And yeah, modifying teks might not be the best idea for a noob. They have strict instructions for a reason. Although there are so many ways of growing, learn from other people's experience.

First of all, here is Waylitjim's Pan Cyan tek on the Shroomery, if anyone cares.. In any case, there are myriad other simpler ways to grow cubensis mushrooms. Jim had success with this tek when growing pan cyans, which is to say that he tailored it to work specifically with cyans. Don't use this tek as a universal mushroom growing formula, or you'll most likely fail.
Another thing I'll point out about that tek is that Jim left a lot of stuff unsaid because he presumes that anyone attempting his recipe has prior knowledge about growing, i.e. successful grows. It's not for beginners.
Gypsum. Five to ten percent by total volume of your substrate is the typical formula. Don't bother with gypsum in your casing, as it won't have an effect on the pH levels in time to make a difference.
Hydrated lime is what is generally used to adjust pH levels in casings and I believe that it is typically added at no more than 5% by volume of the casing itself (I don't know offhand, don't quote me on that). Don't bother adding it to your substrate at all. Regardless, if this is your first grow, fucking around with hydrated lime without knowing what you're doing is a surefire way to fuck your whole grow up. Leave it alone for now.
Forget about all those fancy tyvek filter papers you've linked to. If you're doing a PFTek type grow you don't need tyvek at all.. that's what the vermiculite layer is for. However, if you are going to go with grains just go down to the post office, or get online and order yourself 800 free tyvek envelopes. They work fine and they are FREE!
Finally, if you're growing for the first time, just go with a PFTek, or grain grow that has been done successfully thousands of times, many of which are documented throughout the Shroomery. Forget about cloning and agar. Forget about it now, before you fuck up somewhere along the way, and end up regretting all the wasted time and effort. Instead go with something tried and true. Whatever you do, and whatever tek you choose (this one) FOLLOW IT EXACTLY, and you'll be MUCH more likely to succeed.
